Classic Shortbread
- 2 Cups Flour
- 1 Cup Butter, at room temperature
- 1/2 Cup Confectioner's sugar
- 1/4 teaspoon Salt
- 1/4 teaspoon Double acting baking powder
- 1 teaspoon Vanilla
- 2 tablespoons raw sugar, set aside
Preheat oven to 350°F.
Mix flour, confectioner’s sugar, salt and baking power together in a mixing bowl. Add vanilla and butter. Mix all ingredients together till the butter is completely incorporated.
Put dough into an 8″ (round or square) baking pan. Pat the dough flat into the pan. Prick the top all over with a fork. Sprinkle with 2 tablespoons of raw sugar.
Bake 25 to 30 minutes until edges are an extremely light golden brown. Remove from the oven and cut into squares while still warm. Let cool and enjoy!
Shortbread is one of my go to desserts that you can’t go wrong. It is a simple sweet that appeals to everyone, even my chocolate-loving husband! It is easy to whip up and sure to satisfy any sweet need that arises at any time of day. I do highly recommend consuming while drinking a nice cup of tea, but that is completely up to you. This is a recipe my mum always made for the holidays and for my grandmother. It fits with any occasion, literally. I hope this recipe finds you as much as it does for me, even when there isn’t a celebration and I am just craving something sweet!
